Hello everyone! I hope you’re well and enjoying the signs of spring everywhere. Lucy and I are contemplating the first lawn mow of the year, which is a definite clue that winter is over! The other day, I was thinking a bit about meal planning. In winter, we tend to gravitate towards stodgier meals like stews, bakes, and hearty puddings. While I’ve enjoyed eating these winter favourites the past few months, I’m starting to crave fresher tastes. I regularly go back through my blog posts to refer to recipes and I thought it might be helpful for you to do a little compilation of recipes for spring! If you’re struggling with meal ideas planning, or looking for some inspiration on cooking with seasonal ingredients, then this post is for you. Breakfast
Healthy Cinnamon Banana Muffins
I haven’t made these muffins in ages, but I remember them being so good. They are healthy and fresh tasting, especially with the added blueberries. A perfect lighter breakfast or snack option for spring!
Mango Smoothie
You can find a delicious recipe for a mango smoothie (with a fiery ginger kick) on my post about low waste vegan snacks. This recipe also has turmeric in it, which is perfect for keeping your immune system up!
Lunch
Spring Recipe – Dilly Carrot and Cashew Fritters
I’ll definitely be making this carrot fritters again this spring. The dill adds such a great, spring flavour, and I enjoy them with asparagus in May.
Nadiya’s Egg Rolls
I make these egg-based wraps periodically, which is based on a recipe by Nadiya Hussain from the Great British Bake Off. I tend to make them with fresh mushrooms and sliced olives on large tortillas. You can find the link to the recipe in my post on meals during lockdown. A perfect warm lunch or lighter dinner option for spring!
Dinner
Spiced Mango Chutney Chickpea Wraps
Another wrap-based recipe that I make fairly often are these “Indian” wraps, with mango chutney and chickpeas.
Black Bean and Butternut Squash Tostadas
These tostadas are full of fresh flavour and are perfect alongside a spring salad.
Dessert
Strawberry and Rhubarb Treats
We aren’t quite there yet, but when we get into strawberry and rhubarb season, this rustic strawberry rhubarb galette is chef’s kiss. I personally enjoy it warm with some vegan vanilla ice cream. Or, this Strawberry Rhubarb Cake, made in a springform pan, is also divine!
