Easter Recipes Round Up

It’s a crazy time, isn’t it? I imagine most of us are in the same position that we aren’t celebrating Easter with extended family this year because of Covid-19. I hope you are well. I hope you are safe. If you’re thinking about doing a bit of Easter baking for the people in your household, then I’ve included an easy cookie recipe below, as well as links to my previous posts for an Easter recipes round up.

Baking supplies can be hard to come by at the moment including eggs, sugar, yeast, and flour. But if you do have supplies to spare, baking can be a great, therapeutic activity and it can also keep kids entertained.

Easter Coronavirus Cookies

*kid friendly – mix and bake*

Ingredients:
  • 1/2 cup butter (could use vegan spread or margarine), softened
  • 1 egg (or if you can’t find eggs try: peanut butter, flax egg, mashed bananas, or applesauce)
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp. vanilla
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2/3 cup cornflakes (or any type of cereal will probably work)
  • 1/4 cup oats
  • Optional additions: chocolate chips or any type of chopped chocolate, nuts, sprinkles, dried fruit. I did white chocolate, raisins, and sprinkles.

Easter Coronavirus Cookies Dough

Instructions:

Cream together softened butter, sugar, egg, and vanilla. Add in flour, baking soda, and salt and mix well.

Add in cornflakes/cereal, oats and optional additions and mix.

Easter Cornflake Cookies

Put 1 tbsp. balls on cookie sheet and top with additional sprinkles if desired.

Bake at 180°C (fan oven) for 10 minutes.

Enjoy warm out of the oven, or can be frozen!
