Healthy Coconut Banana Bread

This is a great recipe to use up those ripe bananas! It’s sweetened with honey and generously topped with coconut flakes. Perfect to have warm for breakfast, or take to work for a lunchtime snack.

Coconut Banana Bread

Ingredients:

1 cup ripe bananas (3 medium)
2 eggs
1/3 cup runny honey
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla extract
1 3/4 cups flour (or wholewheat)
1/3 cup melted coconut oil
1/4 milk or water

Brown sugar for sprinkling

Preheat oven to 165°C and grease and line a loaf pan.

In a large bowl, whisk together the coconut oil and honey. Add the eggs and beat well, then whisk in the mashed bananas and milk/water.

Add the baking soda, vanilla, salt, and cinnamon, and whisk to blend. Stir in the four with a wooden spoon until just combined *some lumps okay*. Pour into the tin.

Sprinkle coconut flakes on top and some brown sugar. Bake for 55-60 minutes, or until the centre is set.

Let cook on a wire rack before slicing.
