I also brought these little treats along with the white chocolate cupcakes to my partner’s mum’s birthday party. They are light and spongy and oh, so chocolaty!
Ingredients:
1 cup granulated sugar
1 cup flour
1/2 cup cocoa powder
3/4 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 egg
1/2 cup milk
1/4 cup vegetable oil
1 tsp. vanilla
1/2 cup boiling water
Instructions:
Line muffin tin and preheat oven to 350F (180C).
In a large bowl, mix together sugar, flour, cocoa, baking powder,baking soda, and salt.
Add egg, milk, oil, and vanilla and beat for 1-2 minutes.
Stir in the boiling water. This will make the batter thin.
Fill liners 2/3 full and bake 15-20 minutes.
Cool on wire racks.
Chocolate Buttercream
1/2 cup butter, softened
3-4 cups icing sugar
2 tbsp. cocoa powder
1/2 tsp. vanilla
2-3 tbsp. milk
Pinch of salt
Combine ingredients in a bowl and beat with an electric mixer for 5 minutes, until light and fluffy. Adjust the consistency by adding either more icing sugar or a splash more milk.
Use a piping bag to ice the cupcakes. I used both star and petal tips. Garnish with your favourite decorations. I used rose gold sprinkles.
